I decided that I would that I would try reduce my intake from dairy, since it messes up with my tummy slightly. Im sure many of you feel the same way and so here is one of my go to recipes.

The servings size is for one person but if you want to make these for the whole family, you can always double on the rest of ingredients and share with all the friends and family.
Ingredients to the fluffiest vegan pancakes
Dry ingredients
- 1 cup of self raising flour
- 1/4 teaspoon of salt
- 2 tablespoons of sugar
Wet ingredients
- 1 cup of milk alternative (I use rice milk)
- 1 tablespoon of apple cider vinegar
- 1 teaspoon of vanilla essence
Method
In separate bowls mix the wet ingredients together (let the wet ingredients chill for 5 minutes) and the dry ingredients. Take the wet ingredients bowl and mix it into the dry ingredients bowl and let that chill for 5 minutes. (in this time you can make a simple berry coulis – by mixing a tablespoon of frozen berries, with a tablepsoon of water and a sprinkle of sugar – 1/4 cup).
Once done chilling, heat up a sauce pan, use grease of your choice, make your first flapjack, throw it away (because those always flop). Once done, plate up and serve with a good helping of the berry coulis or whatever tickles your fancy.
